At its core, it’s about trusting the land and the vines to do their work, with a little guidance along the way. For us, this means:

  • Using wild yeast for fermentation instead of commercial yeasts.

  • Avoiding unnecessary chemicals or processes that could alter the wine’s natural flavor.

  • Adding minimal or no sulfites to let the wine stay as close to its original character as possible.

How We Practice Low Intervention at 502

  1. Wild Fermentation

    • We rely on the natural yeasts found on the grape skins and in our environment to start the fermentation process. This brings out the unique personality of each vineyard plot and grape variety, from Merzifon Karası to Narince.

  2. Minimal Additives

    • We keep the winemaking process as pure as possible. Sulfites are used sparingly, if at all, and our wines are often bottled unfiltered, allowing the natural texture and flavors to shine.

  3. Gentle Aging

    • Depending on the wine, we age it in oak barrels or stainless steel tanks, balancing the influence of the vessel with the natural character of the grape. Our Wild Ferment wines, for example, rest in Hungarian oak barrels for a soft, layered complexity.

  4. Respect for the Environment

    • Low intervention doesn’t stop in the cellar—it starts in the vineyard. We focus on sustainable farming practices that prioritize soil health and biodiversity, ensuring that our land stays vibrant for generations to come.
