What is Natural Fermentation?

Natural fermentation, also called wild fermentation, is the process of letting the naturally occurring yeasts on the grapes and in the environment initiate and complete the fermentation. These wild yeasts are unique to our land in Gümüşhacıköy, carrying the specific characteristics of our terroir—the soil, climate, and even the air around us.

Unlike commercial yeasts, which are added to control the process and produce predictable results, wild yeasts create wines that are spontaneous and full of complexity. Each batch is slightly different, giving the wine a sense of individuality and authenticity that can’t be replicated.

How We Craft Wild Ferment Wines

  • The Grapes: Our Wild Ferment wines begin in the vineyard with a blend of Merzifon Karası, Merlot, and Cabernet Sauvignon, grown on 8-year-old vines in our high-altitude plots. These grapes are harvested by hand at peak ripeness to preserve their natural flavors and balance.

  • The Fermentation: After the harvest, the grapes are left to ferment naturally without any added yeasts or sulfites. The wild yeasts, unique to our environment, work slowly, allowing the flavors to develop organically. Fermentation can take weeks, depending on the conditions, and requires close attention to ensure the process unfolds as it should.

  • Aging with Care: Once fermentation is complete, the wine is aged for eight months in Hungarian oak barrels. This aging process adds structure and depth, with subtle notes of vanilla and spice complementing the wine’s natural fruit and earthy flavors.

  • No Additives: To maintain the purity of the wine, we avoid adding sulfites during bottling. The result is an unfiltered, vibrant wine that reflects the true character of the vineyard.
