We hand-harvest our grapes at peak ripeness to preserve their natural flavors and acidity. Each variety is carefully sorted, ensuring only the best fruit is used.

Our wines often undergo natural fermentation with wild yeast, capturing the unique essence of our vineyards. Temperature-controlled processes protect the delicate aromas of native varieties like Merzifon Karası and Narince.

For red wines, maceration enhances color, flavor, and tannins. Gentle techniques like punch downs immerse the grape skins in juice to build complexity.

French and Hungarian oak barrels bring depth and character to select wines, while stainless steel tanks preserve the fresh, crisp profiles of varieties like Narince. Aging times vary, with most wines spending 6 to 8 months in barrels.

Our wines are carefully blended to achieve harmony, whether single varietals or blends like Merzifon Karası, Merlot, and Cabernet Sauvignon. Minimal sulfites are added, and most wines are bottled unfiltered for a natural finish.
